Rocky Road Candy, Spa Style
The
Oaks at Ojai
Makes 34 Pieces (approx. 1 by 1), 12 Calories per serving
Ingredients:
- 2 T. honey
- 1 T. peanut butter
- 2 T. carob powder
- 1 Tsp. vanilla
- 4 rice cakes, unsalted and very crisp
Preparation:
Combine all but rice cakes in a pan and
cook and stir until melted.
To Microwave:
- Combine in a 4 cup glass measuring cup
or bowl and microwave one minute.
- Stir until smooth. If mixture is too
thick, add a few drops of water.
- Break rice cakes into approximately one
inch pieces in a non-stick large bowl.
- Use a rubber spatula to scoop the Carob
Syrup into the bowl and onto the broken rice cakes.
- Use the same spatula with a fork to toss
the mixture to partially coat the rice cakes.
- Press the Rocky Road Candy into a
nonstick sprayed eight inch pan or plate and cool.
- Break or cut into one inch pieces and
serve.
NOTE: Not too many people will stop at one
of these if they have a chance to get more. However, you can eat four of
them for under 50 calories.
If these are left for a few hours or
overnight, they will lose their crunch - to restore their crispness heat 1
minute in the microwave.
