Avocado Vinaigrette

1 medium avocado, peeled and pitted
Juice from one lime
1 tablespoon white wine vinegar
2/3 cup vegetable stock
1/4 teaspoon salt
1 1/2 tablespoons fresh cilantro, chopped
1/4 teaspoon seeded minced Serrano chile
1 clove garlic, minced
1 green onion, minced

Blend all ingredients thoroughly in a food processor or blender. Refrigerate for up to 5 days until serving time.

Yield: 32 (1-tablespoon) servings
